Veggie Pasta Salad

3 cups tricolor rotini pasta, cooked, drained and cooled
1 cup shredded Parmesan cheese (NOT the kind in the green can)
1 cup halved cherry tomatoes
1 cup chopped cucumbers
1 cup chopped fresh broccoli
½ cup sliced black olives
½ cup Italian dressing

Combine all ingredients.

Mexican Chopped Salad

1/3 cup Italian dressing
½ teaspoon ground cumin
2 cans black beans, rinsed
3 large avocados, chopped
3 cups halved cherry tomatoes
1 yellow pepper, chopped
1 orange pepper, chopped
2 cups thawed frozen corn
tortilla chips

Mix dressing and cumin. Combine remaining ingredients in large bowl. Add dressing mixture; mix lightly. Serve with tortilla chips.
